Chilli - From the Urban Cookbook

From King Adz Urban Cookbook, inspired by a street vendor on the Lower East Side, this Tex-Mex recipe is healthy, simple and authentic!
Feeds 4
- 3 tablespoons vegetable oil
- 1 large onion, chopped
- 500g/1lb 2 oz minced ground beef or steak
- 2 cans of tomatoes
- 1 tablespoon of tomato puree
- juice of half a lemon
- 1 teaspoon of salt
- 1 can red kidney beans
- 2 teaspoons of finely chopped garlic
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 2 teaspoons of chilli powder
- 2 teaspoons of fajita spice
- 1 bay leaf
- 475ml/17 fl oz/ 2 generous cups of beef stock
- 3 tablespoons of sour cream
Simply fry off the onions in the vegetable oil, then brown the meat in the same pan. When the meat is done add the remainder of the ingredients, but not the sour cream. Leave it to simmer (the longer the better). The cayenne gives it a nice kick, but if you like it really hot then add more.
Serve with rice, stiring in the sour cream at the last minute.
